Kopi is the Indonesian word for coffee. Luwak is the word for civet cat. Kopi Luwak (or Luwak Coffee) comes from the islands of Sumatra, Java, Bali and Sulawesi; which are part of Indonesia's 13,677 islands (only 6,000 of these islands are inhabited).
It is not only the exotic location that makes these coffee beans of such fine quality, but the interesting fact that Luwak coffee is made from coffee berries which have been eaten by, and processed through the digestive system of the Asian Palm Civet. These civets eat only the ripest and most succulent coffee berries and the resulted beans are of the highest quality. While the bean is in the civets system, it undergoes natural fermentations; however, the beans remain undigested. The intact beans are eventually collected from the forest floor, cleaned, sterilized, sun dried and then roasted and ground just like any other coffee.
The result is a coffee like no other; having a rich, full flavour with hints of caramel and chocolate; a truly earthy and exotic blend; with a body that is nearly syrupy and smooth, including a sumptuous aftertaste.
Because of the laborious and meticulous method of collecting quality product, there is not a lot of Luwak coffee produced worldwide; thereby setting the price at a premium. In fact, because Luwak coffee is widely considered the finest coffee in the world, it can sell as high as $90.00 USD per cup. At most, only 1,000 lbs. (450 kg) of quality Luwak coffee qualifies for the world market.
